I first found this book while browsing a bookstore on a date night, because apparently that’s what you do when you’re old. As I was flipping through, I kept saying (out loud, to myself), “I’d eat that!” and “I want that!” So obviously, it has to be my next cookbook purchase. And while I haven’t loved everything so far, the book still had a lot of potential and I’m not writing it off yet.

How Hungry Happens Mediterranean Stacks Up

Recipe appeal

This is what instantly caught my attention! There are so many recipes that look utterly delicious but also totally do-able. I love the focus on fresh, whole foods. So many veggies!

Recipe reliability

Results so far have been hit or miss. Some have been excellent and I’ve already made them multiple times. Others – like the Boyfriend Steak Skillet and Banana Chocolate Breakfast Cookies– weren’t great, but have potential. I’ll give those another try and report back.

Practicality

I have several Mediterranean cookbooks, and this one is the most accessible ingredient-wise. The instructions are clear and easy-to-follow, so this book is beginner-friendly as well.

Roasted Veggie Pizza

😲Biggest Surprise: Roasted Veggie “Pizza”
I’m firmly in the camp of “the toppings are the best part” when it comes to pizza. Which is basically all this is. Using pre-roasted veggies makes this a quick, easy meal (but TBH, I’ll probably add some pepperoni or sausage next time.)

😕 Biggest Disappointment: Melitzanosalata Garlic Bread
What seemed like a great idea for a predinner snack turned out mushy and bland.

❤️Can’t Stop Making: Crispy Parmesan Carrot Sticks
I always have a bag of carrots in my fridge, so this is my new go-to when I need a quick side. I even messed them up the first time, and they were still delicious.

🏆 Most Likely to Become a Tuesday Night Staple: One Pot Sundried Tomato and Chicken with Orzo
I love a one pot meal because it makes dinner (and cleanup) less stressful, but honestly, sometimes they don’t turn out well. This one, however, feels balanced and is full of fresh flavor.

Borrow!

Because I’ve had mixed results from this book, I’m putting it in the Borrow column. Your mileage may vary, and it may be worth adding to your kitchen for the inspiration (or the carrots) alone. There are a few more recipes that look worth trying, so my recommendation may change over time.
